citizen cookies make delicious, beautiful, and unique cookies like no other cookie out there. while other pretty cookies are, well…pretty, our cookies actually taste good. really, really good. in our first few months, we easily tested 70+ variations of the original sugar cookie recipe we started with. take a peek at our blog to see some of the experiments and results that helped form our current recipe. we wanted our cookies to be sweet, but not too sweet. so we use cream cheese to balance out the sugar. we also wanted our cookies to be soft, so we spent a lot of time experimenting with portions and ingredients and brands to get them just perfect. lastly, we use a very delicate balance of vanilla, almond extract, and lemon juice to make them taste like heaven. then we take that very delicate recipe and make amazingly beautiful cookies. how we actually make them is a trade secret, but have no doubt these cookies are not only made with high-quality ingredients, but tremendous amounts of math, technology, science, and power tools. as the company got started, michelle spent just as much of the start-up capital on construction materials as she did on baking equipment. the early versions of our cookie were created using pvc pipe, a specialized hot wire cutter, and a traffic cone. even today, michelle prefers to use 2” pvc pipe for a rolling pin instead of the fancy marble one that sits unused.
